  • Tasty BBQ Baby Back Ribs
Ingredients:

1 Rack of baby back ribs
1 Banana leaf (optional)
1 Bottle of a store bought BBQ sauce that you prefer
1/2 Can of tomato paste
1/2 Cup of water
Paprika
Dry chopped onion
Salt
Pepper
Garlic salt
Sugar
2 Cloves of garlic (finely minced)
Vinegar

Preparation Needs:

Preheated oven to 325 Degrees
Grill (Optional)
1 Roll of big aluminum foil

Preparation:

Rinse pork with warm water, while removing the thin membrane from the inner part. Pat dry. Lay, meat side down, in a sheet of tin foil, enough to wrap like a bowl and seal at the top. Sprinkle with salt, pepper, garlic salt, and paprika.

(OPTIONAL)

Cut the banana leaf to fit under the rack, place on the ribs and flip back on the foil with meat side up. The banana leaf just adds extra smoky flavor, if not using just flip the ribs back onto the foil with meat side up. Sprinkle with salt, pepper, garlic salt, and sugar. Coat with paprika. Wrap the foil so that the ribs are in a pocket, add 3 tablespoons of water and a couple drops of liquid smoke and seal from the top while rolling the edges. Wrap again with foil just to make it stronger. Place in oven or grill at low heat, let cook for 2 1/2 hours without disturbing. Remove and let stand closed for ten minutes.

In sauce pan, on low heat, coat with a little olive oil, add garlic and fry for 30 seconds, add bbq sauce, tomato paste, and water. turn heat to med. Add 1 tablespoon of vinegar, 2 tablespoons of sugar, sprinkle dried onion. Tasting and adding spices as needed. Simmer until it thickens up.

Open foil carefully. Drain the extra liquid. Still using the foil, flip the ribs back again with meat side down, coat the inner ribs with sauce and place back in the oven or directly on the grill for five minutes. Remove carefully and flip with meat side up and coat with sauce, put back in the oven or grill until sauce glazes. Remove and let stand a minute, slice while coating with more sauce.

  • Korean Style Teriyaki Short Ribs

Here is a very popular and full of flavor dish that will be sure to bring you back to the islands. I am sure you will not find this type of flavor in most of the parts of the mainland.

Ingrediants:

3lb. korean style beef short ribs (if cant find around your area, thin sliced beef for jerky will work as well

1/2 cup soy sauce

2 tbsp. sugar

2 cloves garlic (minced)

1 inch piece ginger root(grated)

2 stalks green onion

1 ripe mango(cubed small)

1 ripe papaya(cubed small)

1 tbsp sesame oil

2 tbsp sesame seeds

1/4 cup water

salt

black pepper

Sauce:

combine all ingrediants, minus the beef in large bowl. Mix, taste, adding more salt, pepper, or sugar, until desired taste. Set some in anopther bowl and save for when the meat is done.

Prep:

Add the beef to the sauce, making sure all the beef gets covered. Soak for at least 4 hours, best if soaked over night.

Cooking:

Best if done on a grill. Cook til desired doneness. Dipping in sauce at least once throught. This meat will stay moist even if done well done. Some charing will occur, but dont worry, that is just the sugar caramalizing, just dont let it char too much. When all the meat is done, pour remaining sauce that the beef wasn't in over it, great for presentation as well, with all the cubed mango and papaya over it. Sauce that the meat was soaking in can be discarded.

You may cook this in a pan or broil as well.

  • Easy And Tasty Beef Stew
Beef stew is a favorite in the Hawaiian islands. This beef stew is easy to make and very tasty as well. Also if you are not a rice eater, this dish is great for you to become a rice eater. This stew is great on rice.

Ingredients:

2 lb. stew meat

3 large carrots (cut in chunks)

3 stalks of celery (sliced in chunks)

2 large potatoes (cut in chunks)

1 small onion (cut in chunks)

1 can of stewed tomatoes

1 package of any beef stew seasoning

Browning seasoning

1 can tomato sauce(15oz)

water or chicken stock

salt

black pepper

garlic salt

2 bay leaves

flour

Preperation:

Powder stew meat with a little flour (this will thicken the stew as well), fry in the pot you will be using for stew, not much, just to brown the outer part of the beef. Maybe a minute on medium high. Lower heat to medium, add tomato sauce, fill empty can with water or chicken stock, then add. Add the vegetables, the can of stewed tomatoes ( or fresh if desired), add the bay leaves, a few drops of browning seasoning(just to darken it), and add the stew mix. Stir until well blended. Add salt, pepper, garlic salt to suit your taste. Then bring it to a boil, lower heat to low, simmer covered for 3-4 hrs, or until everything is tender, stirring occassionally, adding water or chicken stock, if necessary.

If eating with rice, get your favorite type of rice and follow instructions, I always use calrose type rice, that is the sticky type that is usually used for sushi type recipes. Probably can be found in the asian section in any grocery store.

When done, all that is left to do is enjoy a great bowl of beef stew and rice. This is great for any busy person, it takes about 10-15 minutes to pepare, once you have it simmering, you can forget about it, minus the stirring occassionally. You will love the flavor of this stew.
